Quick & easy recipes: Kiwi avocado and tomato salad
Kiwi fruit is full of nutrients such as vitamin C, vitamin K, vitamin E and potassium; plus, they contain a whole host of antioxidants and fibre. People don’t often consider adding kiwi to a salad... but it’s completely delicious, so here’s a recipe for a quick and easy kiwi, avocado and tomato salad!
Ingredients
Honey – Lime Vinaigrette Dressing
2 teaspoons of virgin olive oil
1 ½ tablespoons of fresh lime juice
2 teaspoons of honey
¼ teaspoon of salt
1/8 teaspoon of ground pepper
Kiwi, Avocado and Tomato Salad
4 cups of mixed greens (or similar)
1 avocado (sliced)
1 cup cherry tomatoes (halved)
1-2 kiwi (peeled, sliced or quartered)
Spring onions (chopped)
Cucumber (chopped)
Parsley, salt and pepper for taste
1/2 tablespoon of fresh lemon juice
Method
Honey – Lime Vinaigrette Dressing
Place all dressing ingredients into a bowl. Toss and refrigerate in an airtight container until ready to use.
Kiwi, Avocado and Tomato Salad
Place mixed greens, tomatoes, spring onions, cucumber, kiwi, and avocado into a large serving bowl. Toss and season with desired amount of parsley, salt and pepper for taste. Drizzle fresh lemon juice or Honey-Lime Vinaigrette dressing to serve.
