Chocolate & hazelnut protein chunk cookies

These chocolate & hazelnut protein chunk cookies are sugar-free, soft in the middle and easy to make. By swapping a few ingredients you can play with flavours and textures and create something for your personal taste or dietary requirements. Inspired by Barebells protein bars, classic chocolate chips are replaced in this recipe with Barebells hazelnut and a nougat protein bar. The bars are high in protein and are completely free from added sugar.

Ingredients

1 cup gluten-free flour

1/2 cup cocoa powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup coconut oil

1/2 cup hazelnut butter ( optional)

2/3 cup coconut /brown sugar

1 large egg

1 teaspoon vanilla extract

1 tablespoon dairy-free milk

2 Barebells Protein Bars

Sea salt/ melted chocolate to decorate ( optional )

 

Method

  1. Whisk all the dry ingredients together. Beat the coconut oil and brown sugar together.

  2. Once well combined add in the egg, vanilla extract, and milk ( nut butter if using it)

  3. Fold in chocolate chunks (Barebells cut in small chunks).

  4. Place dough in the fridge and allow to chill.

  5. Preheat oven and prepare a baking sheet with parchment paper.

  6. Remove dough from the fridge and roll out 1 inch balls and place them on your baking sheet.

  7. Bake for 12-13 minutes.

If you’re feeling adventurous you can explore replacing some of the other ingredients in this recipe, for example, wheat flour to gluten-free flour alternatives, sugar to sweeter or honey, egg to chia egg and etc.
