Zesty lemon and poppy seed muffins

These lemon and poppy seeds muffins are so wholesome and full of flavour. They make a tasty afternoon treat and are one of our absolute favourites to whip up. This recipe includes Greek yogurt which keeps the inside deliciously moist!

INGREDIENTS

1 1/2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup melted coconut oil 

1/2 cup Sweetener

2 eggs

1/2 teaspoon lemon extract

2 tablespoons lemon zest

1 tablespoon lemon juice

1 cup Greek yoghurt

1 1/2 tablespoon poppy seeds

  • Preheat oven to 180 C degrees and prepare the muffin liners and muffin tin.

  • In a medium bowl whisk together flour, baking soda, and salt.

  • In a separate bowl mix the coconut oil and Natvia together. Add the eggs and combine. Mix in lemon extract, lemon zest, lemon juice and greek yoghurt.

  • Add the dry ingredients to the wet ingredients and mix until combined. Fold in the poppy seeds.

  • Fill muffin tins about ⅔ full with muffin batter. Bake for 12-15 minutes until an inserted toothpick comes out clean.

 

Leave to on a wire rack for a few minutes before tucking in. And enjoy!
