Quick & easy recipes: The veggie salad edition

Here is a guide to some of our favourite nutritious vegetarian salad recipes that are quick and easy to make! Whether you’re big on sweet potato salads, love a salad bursting with your favourite greens or perhaps your looking for something a bit more unique, such as a kiwi salad. We have a bit of everything for you…  

The green feast 

Broccoli, Courgette and Avocado Salad

This is sure to become one of your favourite salads. This epic superfood salad contains, broccoli, courgettes, avocado and lemon juice salad. Apart from being a source of your 5 a day, each of these vegetables is loaded with health benefits.

Broccoli is a fantastic source of fibre and protein, as well as the vitamins A, C, E, K and a good amount of B vitamins including folic acid. Courgettes are a good source of potassium, which helps with muscle functions. It is also a great source of vitamin C and folic acid. Apart from being ridiculously delicious, Avocado is a great source of vitamins C, E, K, and B-6. They are also high in omega-3 fatty acids, the good kind of fats. Omega-3 fatty acids provide several benefits to our brain and body.  Here’s how you can make yourself a superfood salad.


Ingredients

1-3 cups mixed greens

1 Avocado

1 Courgette

1 Head of Broccoli 

Chopped spring onions

Parsley, salt and pepper for taste

1/2 tablespoons of fresh lemon juice

Coconut oil

 

Method

  • Slice all the courgettes lengthways with a flat vegetable/potato peeler, into strips about 3mm thick. Lightly fry in coconut oil for 1-2mins until soft. 

  • Boil water and place in a cooking pot. Cut your broccoli and place into a steamer basket (or similar). Place the steamer in your cooking pot and reduce the heat to medium-low. Steam your broccoli until tender. 

  • Place mixed greens, spring onions, and your sliced avocado into a large serving bowl. Add your broccoli and courgettes. Toss and season with the desired amount of parsley, salt and pepper for taste. 

  • Sprinkle fresh lemon juice as dressing and its ready to eat!


 

The Sweet Potato Concoction 

Roast Sweet Potato and Mozzarella Salad

A roasted sweet potato salad is the perfect salad combo worthy of a meal or the perfect side for a dinner party. This quick and easy recipe is complete with a bit of tomato, cucumber and mozzarella.  


Ingredients

1-3 cups mixed greens

1 sweet potato 

Chopped plum tomato 

Chopped cucumber 

Mozzarella 

Optional Seasoning (black pepper, garlic powder, sage, and parsley)

1/2 tablespoons of fresh lemon juice

Olive Oil


Method

  •  Cut your sweet potato into small cubes. Mix your dry seasoning (garlic powder, black pepper, sage and parsley) with olive oil. Toss, turn and coat your cubes with your seasoning mix.

  • Roast your sweet potatoes for 10-15 minutes in an oven (200ºC/400ºF/gas 6). Make sure you check on the sweet potato after 7 minutes and flip them to ensure both sides get perfectly crisp.

  • Place mixed greens, chopped tomato and cucumber, into a large serving bowl and toss. Add your sweet potato and sliced mozzarella cubes. 

  • Sprinkle with fresh lemon juice (or dressing of your choosing) and enjoy!


 

The halloumi mix 

Halloumi and Courgette Salad with Hummus

You can’t go wrong with a Mediterranean inspired grilled halloumi salad. Here’s how you can make your self a quick and easy halloumi, courgette and tomato salad, topped with a tasty hummus of your choosing.  


Ingredients

1-3 cups mixed greens

1 cup cherry tomatoes halved

Chopped spring onions

Halloumi 

1 Courgette 

Hummus 

 

Method

  • Slice your courgette into cubes and boil in a cooking pot for approximately 5 minutes. (Be careful not to over boil your courgettes, as they can quickly become too soft to incorporate into your salad.) 

  • Preheat a lightly oiled barbecue plate on medium-high / under the grill in your oven. Cook you halloumi for 1-2 minutes each side until perfectly crispy or 6-7 minutes under the grill.  

  • Place mixed greens, tomatoes, and spring onions into a large serving bowl. Add your halloumi and courgette and toss your salad. 

  • Add hummus of your choosing to your salad and its ready to eat!

 

 

The kiwi bonanza 

Kiwi, Avocado and Tomato Salad

We are big kiwi enthusiasts! Admittedly, it is often one of those fruits that gets overlooked as a salad. However, we guarantee it is a real gem when included in a salad. And, Kiwi fruits are absolutely bursting with healthy benefits. Not only are they full of nutrients like vitamin C, vitamin K, vitamin E, and potassium. They also contain antioxidants and are a good source of daily fibre.  

Here’s how you can make your self a quick and easy Kiwi Avocado and Tomato Salad, topped with a simple sprinkle of lemon juice or Honey – Lime Vinaigrette Dressing is simply delicious! 

 

Ingredients

Salad

4-6 cups mixed greens

1 avocado sliced

1 cup cherry tomatoes halved

1-2 kiwi peeled, sliced or quartered

Chopped spring onions

Parsley, salt and pepper for taste

1/2 tablespoons of fresh lemon juice

 

Honey – Lime Vinaigrette Dressing 

2 teaspoons of virgin olive oil 

1-½ tablespoons of fresh lime juice 

2 teaspoons of honey 

¼ teaspoon of salt 

1/8 teaspoon of ground pepper 

 

Method

Honey – Lime Vinaigrette.

  • Place all dressing ingredients into a bowl. Toss and refrigerate in an airtight container until ready to use. 

Kiwi, Avocado and Tomato Salad

  • Place mixed greens, tomatoes, spring onions, kiwi, and avocado into a large serving bowl. Toss and season with desired amount of parsley, salt and pepper for taste. 

  • Sprinkle with your freshly made Honey-Lime Vinaigrette dressing.
