Quick & easy recipes: Spinach mushroom pesto pasta
Pesto pasta is a classic and easy dinner, but with a few twists and additions you can make it less uni student and more dinner party-esque in just 25 minutes!
Ingredients
1/2 tbsp. olive oil
100g of Spinach
150g og Mushroom (sliced)
1/2 cup pesto
Basil flakes
Garlic
1/3 cup grated parmesan or mozzarella cheese (Optional)
200g of Sacchettini filled with ricotta and truffle pasta (or other pasta of your choice)
Method
Add chopped mushrooms to a saucepan with 1/2 a tablespoon of olive oil. After, add thinly sliced garlic and basil flakes and cook for a further 8 minutes to suit.
In a separate pan add spinach and sauté until withered and then add to the mushroom mixture.
Pour the pesto into the saucepan with the mushrooms, adding a bit of boiling water to make it creamy.
Add your pasta to a separate pan of boiling water and cook according to the packaging (depends on what pasta you’re using!)
Drain off your pasta and add it into the pan with the pesto, mushrooms and spinach. Garnish with fresh parsley and grated Parmesan cheese.
