Italian-Polish Pop-Up at Pasero Wine Bar, South Tottenham

The UK’s vibrant culinary scene is steadily moving beyond central London, uncovering hidden gems in lesser-known neighbourhoods. Since 21st January, a unique Italian-Polish pop-up, Solan, has landed at Pasero Wine Bar in South Tottenham - for one month only.

Led by chefs Agata, originally from Poland, and Giorgio, from Italy, Solan is a project inspired by memories of home, combined with experience in some of Europe’s most prestigious kitchens, including the three-Michelin-starred Osteria Francescana, one-Michelin-starred KOL, and three-Michelin-starred Noma.

Giorgio grew up in Puglia and began his professional training at 19. He joined Osteria Francescana in Modena, Massimo Bottura’s three-Michelin-starred restaurant, before moving to London to work at KOL under Santiago Lastra for over two years, exploring Mexican techniques and open-fire cooking. His journey continued at Noma in Copenhagen, where he further deepened his understanding of fermentation.

Agata started her culinary career in 2020, stepping into a kitchen for the first time to cook for Michelin-starred chefs Antonio Arcieri and Paco Pérez at Arco in Gdańsk. Her produce-driven approach was honed in acclaimed kitchens such as NOPI (London), Disfrutar (Barcelona), Gresca (Barcelona), and KOL (London).

Solan began as a love for cooking the food closest to home. Over time, it has revealed the harmony between Italian simplicity and Polish depth, enriched by techniques and knowledge gained from training in some of the world’s best kitchens.

Date: Wednesdays to Saturdays. Time: 5:00pm–9:30pm. Location: Pasero, 120a W Green Road, South Tottenham, London N15 5AA. Website: pasero.uk. Instagram: @pasero.uk
